Hungarian Apple Coffee Cake

No matter what time of year this recipe is a winner for brunch or as a dessert. During apple season when you're looking for something different this is a great alternative to the standard apple pie. It's sweet and delicious on it's own or served with ice cream.

Equipment

  • 1 9"x13" baking pan
  • 1 sauce pan to cook apples
  • 1 large mixing bowl
  • 2 small bowls
  • 1 measuring cups and spoons
  • 1 Sharp knife or nut chopper
  • 1 paring knife
  • 1 large mixing spoon

Ingredients
  

Batter

  • 1/4 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup sour cream *or plain yogurt
  • 1 tsp vanilla
  • 2 1/4 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Apple Topping

  • 4 medium to large apples/peeled, cored and sliced
  • 1 Tbsp water
  • 1/4 cup brown sugar
  • 1/8 tsp cinnamon
  • 1 Tbsp flour

Nut Topping

  • 1/2 cup chopped nuts *I use walnuts
  • 2 Tbsp sugar
  • 1/2 tsp cinnamon

Instructions
 

  • Grease 9x13 pan lightly with shortening and preheat oven to 375 degrees Fahrenheit

Apple Topping (make first and set aside to cool)

  • Combine water, apple slices, brown sugar, cinnamon and flour in saucepan and cook until fruit is tender and juice has thickened
  • Remove from heat and let cool

Nut Topping (make and set aside)

  • chop nuts and set aside
  • mix sugar and cinnamon and set aside

Batter

  • Cream shortening and sugar
  • Add eggs and mix well until no lumps of shortening remain
  • Add vanilla and sour cream and mix thoroughly
  • Add flour, baking powder, baking soda and salt and stir until completely incorporated

Putting It All Together

  • Spread half of the batter into the greased 9x13 pan
  • Evenly spoon apple topping over batter
  • Sprinkle half of the chopped nuts and half of the cinnamon and sugar mix over the apple topping
  • Add remaining batter on top (I spoon drops of batter on top and gently spread them to cover most of the topping. It's ok to have small gaps between the batter or at the edges as it will end up mostly covered after it's baked and makes for a nice look if some of the apple shows through)
  • Sprinkle remaining nuts and sugar and cinnamon mixture over the top of the batter.
  • Bake at 375 degrees F. for approximately 30-35 minutes. Top will be golden brown and a toothpick inserted into batter area should come out clean.
  • Serve warm or cold, with or without toppings

Notes

This recipe would be great made with other similar fruits like pears or peaches.  Don't be afraid to be creative or try this with canned or frozen fruits.  Please keep in mind to defrost your frozen fruit first to allow any excess water to be removed. 
If you are using a canned fruit that has a syrup, be sure to drain the syrup first.  
If you choose to use a home or store canned apple pie filling you can just skip the ingredients and steps for making the Apple Topping and substitute your canned pie filling.
