Chocolate Chip Muffins from Homemade Quick Bread Mix
Not much time but want homemade muffins? These are quick to make and delicious. The Homemade Quick Bread Mix is versatile and these muffins are a great example of what you can mix up and have done in less than 30 minutes, start to on the table.
Equipment
- 1 mixing bowl
- 1 mixing spoon
- 1 set measuring cups and spoons
- 1 muffin tin (12 regular size muffins)
Ingredients
- 2 Cups Quick Bread Mix
- 2 Tbsp sugar
- 1 egg well beaten
- ⅔ cup milk or water
- 2 Tbsp melted butter
- ¼ cup mini chocolate chips
Instructions
- Pre-heat oven to 425℉ (218.3℃)
- Spray or line muffin tins
- Stir quick bread mix and sugar together
- Add egg and milk (or water) and stir just a few strokes
- Add melted butter
- Stir thoroughly and add chocolate chips
- Fill muffin tins 2/3 full
- Bake at 425℉ for 20 minutes

Notes
- You can make your muffins without the chocolate chips for plain muffins or you can add 3/4 cup of blueberries, cranberries, or other fruit of your choice.
- The Homemade Quick Bread Mix can also be made into biscuits, scones and coffeecake using the appropriate additional ingredients.
