Scones from Homemade Quick Bread Mix
Scones for breakfast or for tea time are a delicious treat. With this quick and easy recipe made from our Homemade Quick Bread Mix you can make them in just a few minutes. Make them savory or sweet with the addition of your favorite herbs or fruit. I make these for breakfast in less than 20 minutes, mix to table, when we have company staying with us and they are always a hit.
Equipment
- 1 mixing bowl
- 1 mixing spoon
- 1 cookie sheet
- 1 silicon mat or parchment paper
Ingredients
- 2 cups Quick Bread Mix* See quick bread mix recipe
- 2 Tbsp sugar
- 2 egg well beaten
- ¼ cup milk or water
- ½ cup fruit, fruit/nut or fruit/chocolate chip mix or 1 Tbsp herb mix of choice optional
Instructions
- Pre-heat oven to 425℉ (218.3℃)
- Add Quick Bread Mix and sugar in bowl
- If desired, add fruit/nuts/chips/or herbs
- Combine beaten egg and milk and add to dry ingredients
- Stir until a soft dough is formed (you can also mix this using your hands if desired)
- Pat out dough on silicon mat or parchment paper covered cookie sheet until about ¾ inch thick
- At this point you can score with a knife into triangular shapes like a pie and leaving them together, bake. You can also cut with a biscuit cutter to desired size and separate onto covered pan.
- Bake for about 12-15 minutes
Notes
Depending on if you prefer a sweet or savory scone will determine your additional ingredients such as fruit, nuts, chocolate chips, herbs, cheese, etc.
We love cranberry/white chocolate chip, peanut butter/chocolate chip, cheese and garlic and blueberry.
When I add fruit only I use 1/2 cup. If I'm adding fruit and chips, I add about 1/3 cup of each. For herbs 1 tablespoon depending on how strong they are, but this is more to taste and individual preference.
