Vegetarian Salami Sausage

This is another one of my quick oat vegetarian meat substitute recipes. Knowing how to make meat substitutes isn't just for vegetarians! With all the recalls, shortages and questionable ingredients regarding food over the last few years, it's important to have the skills and knowledge to use if needed. With some simple variations in seasoning, you can make pepperoni, bologna, kielbasa and a variety of other sausage type deli meats using this recipe.

Equipment

  • 1 food processor or blender
  • 1 mixing bowl
  • 1 aluminium foil (8"-10" sheet)
  • 1 non-stick spray (or your choice of grease for the foil)
  • 1 steamer (large pot with steaming tray)

Ingredients
  

  • 1 cup Quick Oats
  • 1 egg
  • 1/4 cup water
  • 1 tbsp coconut oil (or shortening)
  • 1 tsp liquid smoke
  • 1 tsp soy sauce
  • 1 tbsp tomato powder (or tomato paste)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1/2 tsp onion powder
  • 1/4 tsp crushed red pepper
  • 1 tsp beet root powder (optional - used for color only)
  • 1 tsp black pepper (used to dust the foil sheet)

Instructions
 

  • Process the quick oats in a food processor or blender until it is a rough flour consistancy.
  • Add all of the ingredients to a bowl and mix well.
  • Cover the bowl and refrigerate for 2 hours or more.
  • Start your steamer so that it is ready when the sausage is wrapped.
  • Spray or grease the aluminium foil sheet.
  • Dust the foil sheet evenly with black pepper.
  • Form the mixture into a sasage about 1.5" - 2" around and wrap tightly in the greased and peppered foil, twisting the ends to seal and squeeze the sausage tight.
  • Place the sausage into the steamer basket, cover and steam for 45 minutes.
  • Remove the sausage from the steamer and allow to cool before unwrapping.
  • Once cooled, unwrap the foil and the sausage is ready to use.
