Cranberry Coffee Cake from Homemade Quick-Bread Mix
This is a quick treat at the holidays you can make in less than 30 minutes using our Homemade Quick Bread Mix. Delicious for breakfast, a brunch get-together or an evening dessert with some ice-cream or whipped cream topping this will be a hit with family and friends.
Equipment
- 1 mixing bowl
- 1 mixing spoon
- 1 set measuring cups and spoons
- 1 8x8 pan
Ingredients
- 2 cups Quick Bread Mix
- 1 egg
- ¼ cup milk or water
- 1 ½ cups Whole Cranberry Sauce *drain excess liquid
- ⅓ cup chopped nuts *optional
Instructions
- Preheat oven to 400 ℉ (204.4℃)
- Combine egg and milk (or water)
- Add to quick bread mix and stir just enough to combine
- Pat dough into a greased 8 inch square pan, pressing the dough up the sides of the pan to create a shell
- Fill shell with drained cranberry sauce and, if desired, sprinkle with chopped nuts
- Bake for about 25 minutes

To make this as a Dutch Apple Coffee Cake, follow instructions below.
Substitute the following for the Cranberry Sauce and Nuts
Blend 3 tablespoons butter, 2/3 cup sugar, 1 teaspoon cinnamon and 1 1/2 tablespoons lemon juice. Prepare coffee cake dough as listed above. Layer about 4 cups of cored, peeled and sliced apples in pan on top of dough. Spread with sugar mixture and bake at 400 ℉ (204.4℃) for about 30 minutes.
