Grandma's 1950's Banana Bread

This delicious banana bread recipe has been handed down in my family for generations and my grown children now make it themselves. Simple ingredients and easy to make this will become a favorite for breakfast or anytime as a snack. Toasted with butter or peanut butter this is a big favorite with the grandkids and adults alike and freezes well to use later or gift during the holiday season.

Equipment

  • 1 mixing bowl medium to large size
  • 1 sifter *optional but preferred for the flour
  • 1 bread pan (8 1/2" X 4 1/2" X 2 1/2") or 2-3 small pans (5" X 3" X 2")

Ingredients
  

  • 1/4 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 large bananas- mashed *or 3 small bananas-mashed
  • 2 cups flour (sifted into measuring cup)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • shortening, butter or margarine to grease bread pan

Instructions
 

  • Preheat oven to 325 degrees Fahrenheit
  • Grease bread pan
  • Blend shortening and sugar in your mixing bowl
  • Add two eggs and blend thoroughly
  • Add mashed banana and mix together
  • Sift the flour, salt and baking powder into separate bowl then add slowly to your wet mix until completely incorporated. Batter will be somewhat stiff not runny.
  • Pour into pre-greased bread pan(s)
  • Bake in pre-heated oven for approximately 45 minutes (may take a little longer depending on your oven)
